Classic Pasta Carbonara

Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.

While the spaghetti is cooking, heat a skillet over medium heat and add the diced pancetta. Cook until crispy, about 4-5 minutes, then remove from heat.

In a bowl, whisk together the eggs, grated Parmesan cheese, and freshly cracked black pepper until well combined.

Once the pasta is cooked, reserve a cup of pasta water and then drain the spaghetti.

Quickly add the hot spaghetti to the skillet with pancetta and toss to combine.

Remove the skillet from the heat and immediately pour in the egg and cheese mixture, stirring quickly to create a creamy sauce. If the sauce is too thick, add a little reserved pasta water to loosen it.

Serve immediately, garnished with more freshly cracked black pepper and chopped parsley.
