Peel and chop the potatoes into equal-sized chunks.
Place the potatoes in a large pot and cover with cold water. Add salt to taste.
Bring the water to a boil and cook the potatoes until fork-tender, about 15-20 minutes.
While the potatoes are cooking, roast the garlic by wrapping it in foil and placing it in the oven at 200°C for about 20 minutes until soft.
Drain the cooked potatoes and return them to the pot.
Add the roasted garlic, butter, and cream to the potatoes.
Mash the potatoes until smooth and creamy, adjusting the consistency with more cream if necessary.
Season with salt and black pepper to taste.
Transfer to a serving bowl and garnish with chopped chives. Drizzle with melted butter if desired.
