Oven-Baked S'mores Cake

Preheat oven to 175°C (350°F).

Combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.

In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.

In another bowl, combine buttermilk, oil, eggs, and vanilla extract.

Add the wet ingredients to the dry ingredients and mix until just combined.

Gradually add boiling water, mixing until smooth. The batter will be thin.

Pour batter over the graham cracker crust.

Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.

Remove from oven and immediately top with marshmallows.

Return to oven and bake for 3-5 minutes, or until marshmallows are puffed and lightly browned.

Melt chocolate chips in the microwave or over a double boiler.

Drizzle melted chocolate over the marshmallows and sprinkle with crushed graham crackers.

Let cool slightly before serving.
