Kolakakor are traditional Swedish cookies that are soft, chewy, and flavored with spices. They are often enjoyed during festive seasons and are a delightful treat with coffee or tea.
Preheat the oven to 180°C (350°F).
In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Add the egg and mix until well combined.
In a separate bowl, whisk together the flour, baking powder, cinnamon, cardamom, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
Scoop tablespoon-sized portions of dough and roll them into balls.
Place the dough balls on a baking sheet lined with parchment paper, leaving space between them.
Flatten each ball slightly with the palm of your hand and sprinkle a little granulated sugar on top.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
