Ingredients

- Egg white1

lobster sauce:
- Butter50 g
- Flour2 tbsp
- Fish stock5 dl

- Lobster meat, cooked and chopped200 g
- Tomato paste1 tbsp
- Brandy2 tbsp

- Cayenne pepper
for serving:
- Fresh parsley, chopped
- Boiled potatoes800 g

Mix the minced fish with egg white, heavy cream, salt, and white pepper until well combined to form a smooth paste.

Shape the mixture into small balls and set aside.

In a saucepan, melt butter over medium heat and whisk in the flour to make a roux.

Gradually add fish stock and cream, stirring continuously until the sauce thickens.

Add tomato paste, brandy, lobster meat, salt, and cayenne pepper to the sauce. Allow to simmer gently.

Carefully drop the fish balls into the simmering sauce and cook for about 10 minutes, or until they are cooked through.
