Classic Pad Thai

Ingredients
- Rice noodles200 g
- Vegetable oil3 tbsp
- Eggs2
- Garlic, finely chopped3 cloves

- Firm tofu, cubed200 g
- Shrimp, peeled and deveined100 g
sauce:
- Fish sauce3 tbsp
- Tamarind paste3 tbsp
- Brown sugar1 tbsp
- Water1 dl
garnish:
- Roasted peanuts, crushed
- Fresh lime wedges
- Bean sprouts
- Chopped scallions

Soak the rice noodles in warm water for 20-30 minutes or until soft, then drain and set aside.

Heat vegetable oil in a large frying pan or wok over medium-high heat. Add the garlic and stir-fry until fragrant.

Add the shrimp and tofu to the pan. Stir-fry until the shrimp are pink and cooked through.

Push the shrimp and tofu to one side of the pan. Crack the eggs into the pan and scramble until fully cooked.

Add the drained noodles to the pan, stirring to combine with the eggs, shrimp, and tofu.

In a small bowl, mix together the fish sauce, tamarind paste, brown sugar, and water. Pour this sauce over the noodle mixture, tossing to coat all the ingredients well and cooking until the noodles are tender.

Serve the Pad Thai hot, garnished with crushed peanuts, lime wedges, bean sprouts, and chopped scallions.
