Mix flour and eggs in a bowl to form a dough. Knead until smooth, then roll out thinly and cut into noodles.

Boil noodles in salted water for 2-3 minutes until tender, then drain and set aside.

Slice carrot, bell pepper, and green onions. Separate the green onion whites from the greens.

Heat oil in a large wok or skillet over medium-high heat. Add the broccoli, carrot, and red bell pepper. Stir-fry for about 5 minutes.
