Directions
- 1
Preheat your oven to 175°C (350°F). Grease and flour seven 6-inch round cake pans.
- 2
In a large bowl, whisk together flour, sugar, cocoa powder, and baking powder.
- 3
Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients, and mix until smooth.
- 4
Divide the batter evenly into seven bowls. Color each bowl with a different color of the rainbow using food coloring.
- 5
Pour each colored batter into a prepared cake pan and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- 6
Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- 7
While cakes are cooling, prepare the frosting by beating together the softened butter, powdered sugar, heavy cream, and vanilla extract until light and fluffy. Add blue food coloring to achieve a desired shade.
- 8
Once cakes are cool, level them with a knife or cake leveler. Place the first layer on your cake stand or plate and spread a layer of frosting over it. Repeat with remaining layers, following the order of the rainbow.
- 9
Apply a crumb coat of frosting around the entire cake and chill for 30 minutes. After chilling, apply a final coat of frosting for a smooth finish.
- 10
Decorate the top with mermaid tail fondant decorations, sprinkle with edible glitter, and arrange sugar pearls and edible sea shells around the base.
- 11
Chill the cake until ready to serve.
Enjoy your food!
