Season the chicken breast with taco seasoning, salt, and pepper.

Heat a skillet over medium heat and add 1 tablespoon of olive oil. Cook the chicken until golden and cooked through. Then, dice or shred the chicken and set aside.

In the same skillet, add another tablespoon of olive oil, then sauté the sliced onions and bell peppers until softened.

On a flat surface, lay out the tortillas. Sprinkle half of each tortilla with cheese, followed by the cooked chicken, sautéed peppers and onions, and then another layer of cheese. Fold the tortillas in half to cover the filling.

In a clean skillet over medium heat, cook the quesadillas for about 2-3 minutes on each side, or until the tortillas are crispy and golden, and the cheese has melted.
