Ingredients
waffle:
- All-purpose flour250 g
- Dark brown sugar50 g

- Milk60 ml

filling:
- Butter75 g
- Dark brown sugar150 g
- Golden syrup4 tbsp
- Ground cinnamon1 tsp

Melt 100g of butter and let it cool slightly.

Mix the flour, 50g of dark brown sugar, salt, and yeast in a bowl.

Add the melted butter, egg, and lukewarm milk to the dry ingredients and mix until a smooth dough forms.

Cover the dough and let it rise in a warm place for 45 minutes.

For the caramel, melt 75g of butter, 150g of dark brown sugar, and the golden syrup in a saucepan over low heat. Stir until the sugar dissolves.

Add ground cinnamon to the caramel and mix well. Remove from heat and set aside to cool.

Divide the dough into small balls (about 20g each) and press each ball in a preheated waffle iron. Cook until golden brown and crispy.

Cut each waffle in half horizontally (be careful, they’re hot!) and spread a layer of the caramel on one side, then sandwich back together.
