This quick and simple pasta carbonara is a classic Italian dish made with spaghetti, eggs, cheese, pancetta, and pepper. It's creamy, savory, and can be made in just 20 minutes, perfect for a weeknight dinner.
Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente.
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes.
In a bowl, whisk together the eggs, grated parmesan cheese, and a generous amount of black pepper until well combined.
Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and add it to the skillet with the pancetta. Toss to combine.
Remove the skillet from heat and quickly pour the egg and cheese mixture over the hot pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
