A rich and hearty classic Bolognese sauce made with ground meat, tomatoes, and aromatic vegetables, served over pasta and topped with grated Parmesan cheese.
Heat olive oil in a large pot over medium heat.
Add finely chopped onion, carrot, and celery. Sauté until softened, about 5-7 minutes.
Stir in minced garlic and cook for an additional minute until fragrant.
Increase heat to medium-high and add ground beef and pork. Cook until browned, breaking it apart with a spoon, about 10 minutes.
Pour in the red wine and let it simmer until reduced by half, about 5 minutes.
Add canned tomatoes, tomato paste, bay leaves, salt, and black pepper. Stir well to combine.
Reduce heat to low and let the sauce simmer gently for 1 to 1.5 hours, stirring occasionally.
Pour in the milk and stir to incorporate. Simmer for an additional 15 minutes.
Remove bay leaves before serving. Adjust seasoning if necessary.
