Chocolate Chip Ice Cream Sandwiches

Preheat your oven to 180°C (350°F).

In a mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.

Add in the vanilla extract and the egg, mixing until well combined.

In another bowl, sift together the all-purpose flour, baking soda, and salt.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Fold in the chocolate chips until evenly distributed in the dough.

Scoop tablespoon-sized portions of cookie dough onto a lined baking sheet, leaving space between each cookie as they will spread.

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

While the cookies are cooling, prepare the ice cream. In a large bowl, whisk together the heavy cream, whole milk, granulated sugar, and vanilla extract until the sugar is dissolved.

Stir in the chocolate chips, then pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Once the cookies are cooled and the ice cream is ready, scoop a generous amount of chocolate chip ice cream onto the flat side of one cookie and top it with another cookie, pressing gently to create a sandwich.

Dust the finished ice cream sandwiches with cocoa powder before serving, if desired, and place them on a rustic wooden board for presentation.
