Classic Oatmeal Raisin Cookies

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

In a mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until smooth and fluffy.

Add in the egg and mix until fully incorporated.

In a separate bowl, combine the rolled oats, all-purpose flour, ground cinnamon, baking soda, and salt.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Fold in the plump raisins until evenly distributed throughout the dough.

Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie as they will spread while baking.

Bake in the preheated oven for about 10-12 minutes, or until the edges are golden-brown and the centers are set but still soft.

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
