This Cheesy Beef and Rice Casserole is a simple, kid-friendly dish that combines ground beef, rice, and plenty of cheese for a comforting meal. It's perfect for busy weeknights and can be enjoyed by the whole family.
Preheat your oven to 180°C (350°F).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.
Add the ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
Stir in the diced tomatoes, cooked rice, salt, black pepper, and paprika. Mix well and let it simmer for about 5 minutes.
Transfer the beef and rice mixture into a greased casserole dish. Spread it evenly.
Sprinkle shredded cheddar cheese on top of the mixture.
Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped parsley.
