In a mixing bowl, whisk together the heavy cream, whole milk, granulated sugar, vanilla extract, and salt until the sugar is dissolved.
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it thickens and reaches a soft-serve consistency.
While the ice cream is churning, prepare the cookie dough by creaming the butter, brown sugar, and granulated sugar together until light and fluffy.
