Swedish Gingerbread Cookies (Pepparkaka)

Preheat the oven to 175°C (350°F).

In a bowl, mix the flour, baking soda, ginger, cinnamon, and cloves together.

In another bowl, cream the butter and brown sugar until light and fluffy.

Add the honey and egg to the butter mixture and mix well.

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Chill the dough in the refrigerator for about 30 minutes.

Roll out the dough on a floured surface to about 3 mm thick.

Cut out shapes using cookie cutters and place them on a baking sheet lined with parchment paper.

Bake in the preheated oven for 8-10 minutes or until the edges are golden brown.

Let the cookies cool completely on a wire rack before decorating.

To make the icing, mix the icing sugar with water until smooth. Use a piping bag to decorate the cookies as desired.
