Peanut Butter Cookies

Preheat oven to 190°C (375°F).

In a bowl, whisk together flour, baking soda, baking powder, and salt.

In a separate bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Roll dough into 1-inch balls and roll in granulated sugar.

Place on ungreased baking sheets and flatten slightly with a fork, making a criss-cross pattern.

Bake for 10-12 minutes, or until golden brown.

Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
