Preheat your oven to 180°C (350°F).
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.
Add the minced beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
Stir in the tomato sauce, oregano, salt, and pepper. Let it simmer for about 10 minutes to blend flavors.
In a large baking dish, layer half of the cooked pasta, followed by the beef mixture, and then half of the cheddar and mozzarella cheese.
Repeat the layers with the remaining pasta, beef mixture, and top with the remaining cheese.
Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Garnish with fresh parsley before serving.
