Rinse and drain the black beans, then mash them slightly with a fork in a bowl.
Chop the cilantro and mix it with the black beans. Season with salt and pepper to taste.
Heat a skillet over medium heat and add a tablespoon of olive oil.
Place one tortilla in the skillet and sprinkle half of the cheddar cheese on one half of the tortilla.
Spread a portion of the black bean mixture over the cheese, then fold the tortilla in half.
Cook for about 3-4 minutes on each side, until the tortilla is golden brown and the cheese is melted.
Repeat with the remaining tortillas and filling, adding more oil to the skillet as needed.
Cut the quesadillas into wedges and serve hot with salsa on the side.
